Happy Birthday, Dad!

I finally got around to making my Dad a cake for his birthday, which was last week. I used a box yellow cake mix, but I added some extra stuff so that it would hold up. I couldn’t tell how long the cake mix had been sitting around, so I added an extra teaspoon of baking powder. The last time I made a cake straight from the box, it didn’t rise like it was supposed to. I learned my lesson. I also added vanilla and almond extracts and a few dashes of cinnamon to the batter.

For two 9-inch rounds, the directions said 20-26 minutes, but we have a convection oven so everything cooks faster. I took the cakes out from the oven kind of early to see how they were baking, and the knife stuck in the center came out clean. In fact, I thought it was a little bit dry. I poked a bunch of holes in each of the cakes and poured some coconut milk on top to keep them moist. After they were cooled, I iced the cakes with a minimal amount of homemade buttercream.

He loved it and we ate it all up. Hopefully, I will post a recipe for fully scratch-made (no box) birthday cake in the near future. Stay tuned!
