Almond Sugar Cookies

I love cookies! And sugar cookies tend to be my least favorite because they just taste, well, sugary. There isn’t usually a depth of flavor in sugar cookies. My mom knows better. She adds almond extract to almost all of her baked goods, and though I didn’t understand why at first, I totally get it now.

I searched for a solid almond sugar cookie recipe, and this one was really good (http://www.thenovicechefblog.com/2013/03/almond-meltaway-cookies/). It is a super simple and quick recipe, and the outcome was excellent! I received compliments from all who tasted them. I did tweak the recipe a bit. The recipe calls for butter, but I used vegetable shortening, which I think results in a more tender cookie. I also added a dash of vanilla extract to the cookie dough, because vanilla makes everything better.

First, I turned the oven on to 375 degrees, as specified. I didn’t use a stand mixer, although that is certainly on my kitchen wish-list. I just used a wooden spoon and a bowl. I mixed the flour, salt and baking powder together first, then added the egg, the vegetable shortening, the sugar and the extract. The dough comes together very well. If it is still very crumbly, just add a bit more shortening.

Take a spoonful of the dough, roll between your palms to make a ball, flatten and place on an ungreased cookie sheet. Bake for 8 minutes or until the edges are golden brown. I only got about 20 cookies out of the recipe, but maybe my dough balls were larger.

 

The end result was a very light and thin cookie with a heavenly, complex flavor. I remember eating one and not remember that I had just consumed one, which is dangerous. But maybe that means they don’t have as many calories as I think they do?

We don’t count calories where we come from, but I omitted the icing because the cookies didn’t need it. They were THAT good.

Light sugar cookies with a complex almond flavor.

Ingredients

  • 2 cups all purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup vegetable shortening
  • 3/4 cups granulated sugar
  • 1 large egg
  • 2 teaspoons almond extract
  • 1 teaspoon vanilla extract

Directions

Step 1
Preheat the oven to 375 degrees Fahrenheit.
Step 2
Combine the flour, baking powder and salt.
Step 3
Add in the egg and break it up a bit with the spoon. Add in the shortening and the sugar. Mix well.
Step 4
Add the almond extract and the vanilla extract. Mix well.
Step 5
Take a spoonful of the dough and roll into a ball. Flatten and place on an un-greased cookie sheet.
Step 6
Bake for 8 minutes or until the edges are golden brown.
Step 7
Let the cookies cool before transferring them to a serving dish. Enjoy!
